Wassailing is an ancient custom intended to bring life to the orchard in the depths of winter. The word ‘wassail’ comes from the Old English “Waes hael” meaning “Good Health!”. The custom has many local variations, but generally includes making noise to awaken the trees and frighten away evil spirits. The Wassail is also the name for a large bowl of the hot spiced drink which is shared.
